PEORIA (Heart of Illinois ABC) - Last November, Ashers Bar and Grill on East Fort St in Farmington was destroyed in a fire.

It took more than one hundred firefighters to control the flames.

It left over a dozen unemployed workers and two owners who wanted to keep going.

“We’re pretty determined to keep our brand alive and our place around,” co-owner Russell Spencer said.

The idea of opening a food truck while looking for a new building started out as a joke.

The Spencers soon found one and felt that opening the truck would be the best choice.

“When we first opened our place, we put everything we had on the hook and we threw it into the pond hoping to catch a big one,” Russell said. “We’re still hoping to catch the big one and that’s why we’re keeping going.”

The new location is on Main St in Farmington.

Some of the old Ashers team came back to help.

“It seems like people are really excited to be back and that we’re back and that our food is out there,” server for Asher Bar and Grill Madison Johnson said.

The food truck opened last Friday. Owners said they’d seen some traction, but hope that once it warms up, more people will head over.

The entire menu would not be available, but you’d still see stables like the award-winning Asher Bombs.

They said they were still looking for a building and hoped to open back up by April.

They planned to keep a food truck alongside.

“I think this is something that we do want to pursue,” Russell said. “If we could take our foods and our brands to other towns, it would be a good fun way to keep Ashers mobile.”
